Single vineyard expression from the hills made with little intervention, instead, the intent is to listen to the fruit and act accordingly. Named after their equally expressive child Polly who at age 2 also did the artwork for the label.
Polly was hand-harvested as whole berries, fermented dry as whole berries, pressed at low baume and matured in old French puncheons.
Minimal filtration, unfined and small doses of sulphur at bottling
